精對苯二甲酸親油性較大，易穿透細(xì)胞膜進(jìn)入細(xì)胞體內(nèi)，干擾細(xì)胞膜的通透性，抑制細(xì)胞膜對氨基酸的吸收；進(jìn)入細(xì)胞體內(nèi)電離酸化細(xì)胞內(nèi)的堿儲(chǔ)，并抑制細(xì)胞的呼吸酶系的活性，阻止乙酰輔酶A縮合反應(yīng)，從而起到食品防腐的目的。

精對苯二甲酸用于化學(xué)分析用試劑;用于醫(yī)藥工業(yè)和植物遺傳研究 苯甲酸又稱為安息香酸，故苯甲酸鈉又稱安息香酸鈉。苯甲酸在常溫下難溶于水，在空氣（特別是熱空氣）中微揮發(fā)，有吸濕性，大約常溫下0.34g/100ml；但溶于熱水；也溶于乙醇、氯仿和非揮發(fā)性油。而苯甲酸鈉在都使用苯甲酸鈉；苯甲酸和苯甲酸鈉的性狀和防腐性能都差不多。

Benzoic acid is difficult to dissolve in water at room temperature, slightly volatilized in air (especially in hot air), hygroscopic, about 0.34g/100ml at room temperature; but it is soluble in hot water; it is also soluble in ethanol, chloroform and non-volatile oil.
